Our 100-year-old sourdough that we bring from Southern France gives our breads their traditional structure, aroma and taste. Only our head bread master chef and production manager can access our aged special sourdough. It is under their care and continues to be fed and kept alive every day.
Baking sourdough bread wants to mastery and patience
Producing sourdough bread is a laborious jobs that requires the methods and craftsmanship used by our ancestors. This is exactly the definition of being an artisan bakery. While standard breads are fermented in 60 minutes with industrial yeasts, our masters ferment this sourdough bread you eat with patience and care for more than 12 hours.

The beneficial microorganisms that we have used in sourdough for thousands of years add tasty flavor to the bread. Each sourdough bread has its own unique aroma, taste and consistency. We carefully selected the sourdough that you will taste in this bread from among different yeasts we have tried in 4 parts of the world. We brought it to our country from Southern France with great care.
